Fermenta Biotech Limited has entered into an exclusive Licence Agreement with Vellore Institute of Technology (VIT), Vellore for the commercialization of technology for Natural In-Situ Vitamin B12 Fortification in Fermented Foods.
- The technology is covered under Indian Patent Application No. 202441015300
- Developed by Dr. Krishnan Venkataraman and his team at the Centre for BioSeparation Technology (CBST), VIT Vellore
- Technology enables Vitamin B12 enrichment during the natural fermentation process rather than conventional addition to finished food products
- Process uses selected nutrients and cofactors during fermentation to enhance Vitamin B12 formation within the food matrix
- Designed to integrate with existing food fermentation processes without substantial alterations to conventional production methods
- Laboratory studies demonstrated approximately 80% retention of enhanced Vitamin B12 levels following cooking
- Applicable across fermented foods including curd, idli/dosa batters, appam, breads and other traditional fermented foods
