  • The technology is covered under Indian Patent Application No. 202441015300
  • Developed by Dr. Krishnan Venkataraman and his team at the Centre for BioSeparation Technology (CBST), VIT Vellore
  • Technology enables Vitamin B12 enrichment during the natural fermentation process rather than conventional addition to finished food products
  • Process uses selected nutrients and cofactors during fermentation to enhance Vitamin B12 formation within the food matrix
  • Designed to integrate with existing food fermentation processes without substantial alterations to conventional production methods
  • Laboratory studies demonstrated approximately 80% retention of enhanced Vitamin B12 levels following cooking
  • Applicable across fermented foods including curd, idli/dosa batters, appam, breads and other traditional fermented foods
